Yangs Dumplings [小杨生煎], Shanghai, China

Sheng jian [生煎], a hybrid of xiaolongbao [小笼包] and guo tie [锅贴], are fried on a cast iron pan until the bottom turn deep golden brown and crispy. A Shanghai classic, these pan-fried soup dumplings are often a messy affair. There is a crispy crust covered with sesame seeds wrapped around fragrant pork, surrounded by a slightly sweet, thick broth that often spurts upon biting down. Yang's Dumplings' [小杨生煎] recipe has become a favourite with locals and visitors alike - spawning around 30 locations throughout Shanghai since 1994.

Liang Ji Jiayi Chicken Rice (梁記嘉義雞肉飯), Taipei, Taiwan

Featured in Taiwanese popular variety show - 康熙來了and 小 S' favourite meal, I hunted down the restaurant to try the highly acclaimed Chicken Rice. Very different from Singapore's Hainanese Chicken Rice , the Taiwanese version was steamed white rice with shredded chicken meat. Similar to economical rice, you could choose the sides to accompany the rice. Highly recommended by 小S, it is most delicious if we mix the chicken rice with sunny side up. Personally, I thought that it was an excellent recommendation as it tasted great. As for the sides, priced from TWD30 onwards, they all tasted ordinary. I wondered where the wow factor was. The Taiwan-style Chicken Rice served with shredded chicken, drizzled with sauce. According to 小S, the egg is supposedly broken and mixed with the rice. TanYu [探鱼] - Shenzhen's artisan grilled fish, Singapore

TanYu [探鱼] is one of the popular grilled fish restaurants in Shenzhen. Launched in 2013, it was known as "Shenzhen's most artistic grilled fish restaurant" and became popular overnight. It has foothold in over 70 major cities in China with more than 180 outlets. TanYu opened its first overseas flagship store in Singapore in 2017 and has now 3 outlets - Bugis Junction, Westgate and 313@Somerset. Because of COVID-19, we did not have our favourite grilled fish place at Shanghai. We found this place alternative to sate our craving. TanYu's bestseller and signature dish is the Chongqing Grilled Fish with Beancurd [重庆豆花烤鱼] . It has raw ingredients from Guizhou mountainous area including the local wrinkled skin peppers, fruit of spicebush, mint, herbs, houttuynia root, etc., making this dish special and delicious. Surrounded with fried soy beans, soya beancurd (tofu), parsley and heaps of dried chilli, the broth did not look as spicy as it looked. It has a nice fragranc
