Mott32, a Cantonese fine-dining concept at Marina Bay Sands, Singapore

Mott32 draws inspiration from a Chinese convenience store opened in 1891 at 32 Mott Street in New York City. The store served as the nucleus for what it is now a vibrant Chinatown in one of mega cities in the world. Utilising the latest modern and innovation cooking techniques, this fine dining restaurant marries Chinese food culture with a particular level of modernity.

Hot & Sour Soup, Assorted Seafood 海鲜酸辣羹 | $18
The soup was extremely delightful. The seafood was extremely fresh and these was a great balance between the peppery and vinegary flavours. 

Signature Lobster "Ma Po Tofu" 龙虾配麻婆豆腐 | $106
The mapo tofu is mouthwatering. Compared with Labula Mala Hotpot, this tofu dish is equally divine. The fragrant spices and fresh lobster meat were freshly prepared. The flavours are so good, that you can eat its own or accompanied with steamed white rice. 

Crispy Roasted Pork Belly 脆皮烧腩仔 | $28
Crackling sounds as you chew on the crispy roasted pork belly, served with mustard sauce. 

Poached Garoupa Fillet, Szechuan Pepper Broth 四川水煮斑球 | $98
This poached Garoupa Fillet in Szechuan Pepper Broth has rich peppery, yet not too spicy, broth. The fillet slices were extremely fresh and firm. The broth tasted collagen too. 

Roasted Pork Collar | A moist and tender roasted pork collar with honey sauce. 

Sautéed Asparagus, Water Chestnuts, Ginkgo Nuts 银杏马蹄炒芦笋 | $26


Stir-Fried South Australian Scallops, Snow Fungus, XO Sauce XO酱炒南澳玉带白木耳 | $64


The overall dining experience was excellent. The food was heavenly, but the service could be improved. They seemed to be under-staffed since the relaxation of Social Distancing guidelines. I would love to try other food items in my next visit.
