Gochi-So Shokudo ごち惣食堂 offers affordable, delicious and premium Japanese Iberico Pork dishes in Singapore. I chanced upon this great outlet at #jewelchangiairport
My personal favourite is the Iberico Bowl, priced at SGD13.80. I love the generous portion of chewy short-grained rice. The rice was sweet and fragrant with the right chewy texture. Accompanying with the delightful steamed rice, the Iberico meat slices were tender and moist. Drizzled with mild sweet and savoury sauce, the tender meat slices complement so well with the steamed chewy white rice. Each time you chew the rice and pork together exploded our minds with mixed feelings. (Food rating: 4.5/5)
Traditionally used in Japanese cooking since the Edo period for its amazing qualities and benefits, Bincho-tan charcoal burns cleaning with a high steady heat and the alkalised ashes can neutralise protein acids during cooking. Bincho-tan charcoal complements our Iberico pork with a flavour unachievable using other charcoals.
About Black Iberico Pig
Black Iberico pig is one of the world's best and healthiest pork. Also known as a walking olive tree. Iberian pigs feed naturally on grasses, roots, herbs and most importantly acorns. Acorns are rich in oleic acid, the same found in olive oil. Black Iberian pigs' active nature of foraging, munching their way through tons of bellotes (acorns) ensure that the fat is marbled throughout the muscle, carrying a rich, nutty flavour throughout the meat.
Due to its diet, Iberico pork has a high concentration of oleic acids which have a beneficial effect over blood cholesterol levels.
Premium quality (Bellota grade) is 24 months old Iberian Pig
Cebo grade is high quality: 8-12 months old Iberian pig.
Although there are many similar outlets in the city, Gochi-So Shokudo is still the best in my personal point of view.
