Grilled Goodness at Hide Yamamoto



Once again, Hide Yamamoto blew my breath again with its Robata cuisine, which was amazingly delicious.
Opened by the renowned chef himself, Chef Yamamoto is the man behind his namesake - Hide Yamamoto. He had served three generations of US Presidents: Reagan, Bush and Clinton. He has a chain of restaurants under his belt. The fine-dining restaurant - Hide Yamamoto offers five concepts, Sushi, Teppanyaki, Robata, Ramen & Dining and Sake Bar.

Seasonal Vegetables with Italian Truffle Aroma (above) grilled atop the hot charcoal flame had a very nice charred fragrance. The seasonal vegetables this time were green pepper, sweet potatoes, white parsnip, yellow pepper and zucchini. It was superb choice for starters. The grilled vegetables were sprinkled with salt, bringing out the essence of the vegetables. Marvelous! (Food rating: 4.5)



I enjoyed the Foie Gras very much. Marinated with Saikyo Miso Hint of Yuzu, the goose liver was extremely delicious. The tender soft liver dipped in the miso sauce brought out a nice fragrance. I remembered seeing a French customer was full of praise of this dish. (Food rating: 4.5/5)




Black Truffle Flan with Fresh Sea Urchin Chawan Mushi is a must have. Before you start eating, you must stir the steamed egg, as advised by the restaurant. There was a generous serving of black truffle and the sea urchin, both blended so well in the steamed egg. The egg was silky soft and it immediately melted into the mouth. (Food rating: 4.5/5)



Tender juicy chicken cubes grilled with lemongrass was another superb dish. The Skewered Chicken marinated in ginger sauce was tender, moist and delicious. You could see the meat juice seeping from the lemongrass stick. Grilled atop the hot charcoal stove, the charred corners were ambrosial. (Food rating: 4.5/5)

 
 
If you wish to have ramen, the Aburi Cha-Shu "Tonkotsu" soy ramen may be a good choice. The noodle were very chewy, cooked in al dente style. The broth was very rich and flavoursome. The chashu was tender and had a nice fragance. (Food rating: 4/5)
 
 

After all the dishes, we must have a staple dish. This time, we ordered a portion of Snow Crab and Mushroom Claypot Rice, which was just nice for two. Cooked in a claypot, the rice dish was delicious and it was even better when it was cooled. I loved the granular rice and the nice truffle flavour in the dish. Not forgetting the crab meat and mushroom, both of them were sweet and tender. (Food rating: 4.5/5)



 
Although the prices may be high, you will not be disappointed when you tried these food at Hide Yamamoto.
