HY California @ Marina Bay Sands, Singapore (Food rating: 4/5)



HY California, in short for Hide Yamamoto California, is a more casual dining option than the Hide Yamamoto at level two of Marina Bay Sands Shoppes. Located next to The Art Science Museum and on the street level, the restaurant overlooks the CBD night landscape. The beautiful lightings from Fullerton Hotel and the skyscrapers are breath-taking. No wonder Bernie Ecclestone, Formula One's Commerical Rights Holder, heralded Singapore's Grand Prix as "new Jewel of the Forumla One sports crown".


I was recently introduced to a casual outdoor dining place at Marina Bay Sands. HY California is located on the street level of Marina Bay Shoppes. The restaurant offers California cuisine with a blend of Singapore taste.

In total, we spent about SGD170 for two persons. 

Chilli Crab Soup with Coriander was interesting soup. When the soup was served, the first thing that came to my mind was the chilli crab. The soup was a replicate of the chilli crab gravy. The sweet and spicy gravy was delicious. It was interesting how a Japanese restaurant combined the local taste into its cuisine. You can drink the soup and eat the deep fried bun soaked in the soup. If you are thinking of ordering chicken, you may want to consider ordering the Deep Fried Spring Chicken served with Lemon Wedge. The reason is because the chicken skin was absolutely crispy and the meat was tender and juicy. The chicken breast is usually dry when you eat from other restaurants. However, the chicken breast at HY California was still moist and tender. The restaurant knows how to prepare the chicken and do it very well. Kudos to HY California. (Food Rating: 4/5)
 
Another item in the menu caught my attention. It was the Chilli Crab Roll served with snow crab, lettuce Omelette, Tomato and Chilli Sauce. The sushi was made of omelette, lettuce, snow crab wrapped with Japanese rice and sprinkled with crab roe. Lastly, it was then wrapped with a thin layer of noodle that I thought was the Vietnamese rice wrap. The sushi was then served with tomato and chilli sauce. (Food rating: 4/5)



Baked "Hokkaido" Scallops in Truffle Pie is a must if you want to order a starter. This truffle pie is definitely 100% delicious! At one look at the pie, you think that the filling will be dry. However, when you cut the pie open, you will be surprised that soup from the scallop flowed out. The seaweed is placed at the bottom of the pie as a waterproof base. This prevents the soup from making the pie soggy. The nice truffle oil in the pie was wonderful and aromatic. The scallops were also tender and juicy. Overall, this starter was so good that you could just eat it on its own. (Food Rating: 4.5/5)

Bento Box served with 'Nigiri' sushi, California Roll, Sirloin Steak, Miso Soup, Assorted Tempura, Miso Marinated Fish, Salad and Ice Cream, was like a mini sampler. Each of the dishes were delicious and perfectly prepared. Starting from the front row from left was the miso soup. The miso and the shell fish were ingeniously prepared. It was refreshing. (Food Rating: 3.5/5)

On its right was the marinated fish. The fish was freshly prepared. It was tender and moist. (Food Rating: 3/5)

2nd row on left was the nigiri sushi. Again, the ingredients - the prawn and sashimi were fresh. It was delicious. (Food Rating: 3/5)

The sirloin steak was the most memorable of the entire bento box. The steak was perfectly cooked. The meat was tender and juicy. I was totally hooked to the steak and could not stop eating them. (Food Rating: 4/5)

Third row on left was the California Roll. The fragrant rice was delicious. It could be eaten on its own. The California Roll was great! The generous crab roe, avocado and other ingredients were superbly delicious! Yummy! (Food Rating: 3/5)

Assorted Tempura was freshly prepared. The tempura were drained from oil. And the dish was delightful. (Food Rating: 3/5)
