Jin Shan (金山楼), Singapore



We were window shopping at the Marina Bay Sands Hotel one evening and decided to explore the Hotel. We found a Chinese restaurant and decided to consider Jin Shan at Marina Bay Sands Hotel as one of the venue options for a birthday celebration.

Jin Shan restaurant (金山楼) is a modern, yet elegant Chinese restaurant that serves the best of Cantonese, Hunan and Szechuan cuisines. The famous Master Chef Huang and his dedicated team use the best ingredients to make dim sum and exquisite dishes.

Warmly welcomed by the staff, we asked to view the function room. It was very beautiful with a nice chandelier. It had an elegant ambiance that you could not help to fall in love with the place. The open concept dining experience was indeed refreshing. The lanterns were also private areas where big groups could dine in the open whilst have a little privacy. The function rooms at the back of the restaurants provide more privacy.

The next day, we came back again to have dinner. We ordered a couple of dishes and a staple. The entire dinner experience cost around SGD 200.00. The service rendered were superb. The staff were not only attentive to our needs but also friendly to assist us with good recommendations.

For starters, we ordered Barbeque Meat Combination (三品)which had pork cubes (roasted pork belly), Char Siew (Barbequed meat with sweet honey sauce) and soy chicken. All three of them were delicious that blew me away. Firstly, the skin of the pork belly were so crispy and the meat was very tender and juicy. It was very well done. Then the char siew meat was tender and equally delicious but it was just normal. There was nothing unique about the char siew. The soy chicken was juicy and tender. On the overall, the pork cubes were unforgettable. (Food rating: 3.5/5)



Foie Gras with Roast Duck wrap was an interesting combination. Usually, we had foie gras eating on its own. This time, it combined with roast duck wrapped with crepe skin. At first, we thought that we were eating Peking Duck wrapped with crepe. When I was picking up the wrap, the foie gras broke into two pieces. The two broken pieces looked overcooked. The meat was a little hard. We had tried foie gras at other restaurants and they tasted better. One of the best foie gras was at Hide Yamamoto. (Food rating: 2.5/5)



I was thirsting for soup and ordered a sweet corn soup with crab meat. The crab meat was very sweet. Coupled with the sweetness of the corn, the soup was a delight. I liked it. (Food grading: 3/5).



After watching Hell's Kitchen, I got to know that it was not easy to cook fresh scallops. The seared scallops with XO sauce (省巢XO酱带子) surprised me. The fresh scallops were perfectly cooked and were a little charred. Mixed with the XO sauce, the subtle sweetness of the scallops marveled me. (Food rating: 4/5)



The Jin Shan Special Fried Rice (金山特炒饭), I thought, could be done better. The rice were a little moist. Fried rice was best cooked with overnight rice as it was more granular. However, the overall taste was good. The nicely cooked and well scrambled eggs displayed the skill of the chef. (Food rating: 3/5)



Sliced Pork Belly in Garlic Sauce (蒜泥白肉片) was a must try starter dish when you come to Jin Shan. The perfectly cooked asparagus topped with the pork belly was delicious. The sliced pork belly was freshly cooked and the sauce complimented the meat superbly well. (Food Rating: 4/5)



Honey Sauce in Pork Ribs (蜜汁排骨王) was superb. The crispy crust of the pork ribs and tender, juicy meat was a good combination. The sauce had a unique taste. There was a tint of barley, honey, however, we could make it out of it. Nevertheless, it was delicious. (Food Rating: 3.5/5)



Crab Meat Fried Rice (鲜蟹肉蛋炒饭) was served in an interesting way - a pyramid. The server was very attentive and offered to serve us with individual bowls. We enjoyed chewing the delicious granular rice. The crab meat came in huge chunks and they were freshly cooked. The cooled fried rice gave a delicious aroma. (Food Rating: 4/5)
